You need to go really cheap to beat those guys. Especially rather early in the game, there are some splitting bosses which ANNIHALATE you. There are MANY bosses you will never beat on chaos, I assure you. Really, just try beating Graces on Chaos on your own right from the start. They are also somewhat unfair honestly with the way some targeting and spell timers work with increased difficulty. Those games are balanced a lot better for this than a very vast majority of other multiplayer games you might bring up in comparison.

Graces, Zestiria and Berseria all deliver more of a challenge than even a full set of four players can handle on chaos for most people. Even very seasoned players will occasionally die to just chaos difficulty. You can also limit Upgrades to your gear and whatnot if you really seek the challenge. If thats not enough go to NG+ and go with half EXP or even no EXP (no EXP breaks Graces at least in the sense that only accuracy is a viable stat though). Try beating Kurt in Tales of Graces on Chaos without any extra grinding sessions. Have you ever tried to play the game on "Chaos" dear sir? As I said, I only ever tried it with a second player but that already broke the game and made almost every single boss battle a cakewalk. EDIT: And that's not even mentioning that the games aren't balanced around it and how co-op takes pretty much all the challenge out of the game.
